
Mac and cheese bites with jalapeños

Here are our Mac and Cheese as fun bite-sized portions in a mexican style, with some jalapeños and creamy sauces. Perfect as starter or as finger food, you'll love to start your meal with this.
What's in it
Mac and cheese bites by What's Cooking?
Several sauces of your choice : ketchup, garlic aioli, bbq, salsa etc…
Jalapeños
Fresh herbs of your preference : coriander, parsley etc...
Lime
Vegetable and neutral oil (preference for grape seed oil)
Salt & pepper
The game plan
Wash & then chop fairly finely the green jalapeños to achieve nice circles.
Wash the herb of your choice (we advise coriander to add a mexican flavour alongside the jalapeños) and mince it finely.
Fry the Mac and cheese bites during 5 to 7 minutes at 180°C.
Once crispy, stop the cooking and season them with salt and pepper.
For a traditional presentation, use a small cast-iron pan. Arrange the mac and cheese bites inside the pan, with jalapeños scattered around them (you can also use a metal basket with wax paper for a more casual, pub-style feel).
Add some fresh lime juice on the top.
Put the dipping sauces on small bowls. Or add it directly on top lines of sauce in different directions, which will be very graphic and tasty.
And add the herbs on top for th final touch.
